The passion that the founder of Palazzo di Varignana has always had for the olive tree and for Claterna's history have brought this culture, forgotten for centuries, into our territory.
Today, 120 hectares of new olive groves create the profile of the hills surrounding the resort and give life to a high quality extra virgin olive oil, with intense taste sensations and great aromatic complexity. The line of local products is completed with jams and juices, made with fruit grown and harvested in our farms and hand-crafted in a small workshop. From the terraces of our Rio Rosso vegetable garden there are also the 9 different varieties of aromatic herbs used for our aromatic salts, a condiment with a unique taste thanks to the encounter with the precious sea salt of Cervia.
Beside the products grown directly in our farm, there is also a selection of excellent products, in collaboration with primary companies that share the values of Palazzo di Varignana, such as the pursuit of quality and respect for the great Italian tradition. The result is a refined line of fine teas with unique scents, thanks to the research of our expert blenders, who in 2015 created the Don Carlo and Perle di Palazzo. There is also a line of artisan honey, cured by local beekeepers and with exclusive organoleptic characteristics and one of Italian artisan chocolate, with chocolates and a yummy chocolate spread made with Palazzo di Varignana's extra virgin olive oil and IGP hazelnuts.
