This olive oil is produced using a single olive variety grown in Romagna.
Its bouquet has vegetal notes, opens sweet on the palate and ends with a sharp, spicy, persistent taste.

MONOCULTIVAR NOSTRANA

The latest product of 2018 is a new monocultivar oil, obtained from monocultivar Nostrana olives.
This cultivar originates in the Brisighella area and contributes to a min. 90% of the PDO Brisighella olive. Olives are harvested early, between the half and the end of October.
They have a bright, light green colour, with an elegant smell of freshly cut grass and green apple, ending up in the palate. It has a spicy, green olive, extremely refined final.
Ideal with fish, fish tartare and legumes.

CRU SELECTION

Olives in Varignana are harvested slightly earlier than the ripening period, to obtain olive oils richer in polyphenols (natural antioxidants contained in olives) and a more intense organoleptic profile, rich in fresh sensations combined with green vegetal notes. 
Olives are pressed within few hours from harvesting. Extraction is done in modern mills that prevent oxidation. In order to preserve the oil’s original properties and better conserve it, it is filtered immediately.
Ideal with bruschetta, salads, pinzimonio (fresh vegetables dipped in olive oil and salt), fresh vegetables and vegetables au gratin, carpaccio, soups and boiled legumes, excellent on wild game as well as grilled.

BLU RESERVE BLEND

This olive oil is produced using typical olive varieties grown in Emilia Romagna. Ghiacciola, Nostrana, Pendolino and Correggiolo. At the time of bottling it has a golden yellow colour with intense green shades. Is has a fruity bouquet, with a broad and persistent olive scent, and a refined smell of leaves. Its taste recalls aromatic herbs, green apple and almonds; the final has bitter and spicy notes that persist, perfectly balanced.

RED RESERVE BLEND

This olive oil is produced using typical olive varieties grown in Emilia Romagna. Ghiacciola and Nostrana.
It has a light green colour.
Its fruity bouquet has fresh, vegetal hints, and follows on the palate with spicy and bitter notes that persist.
Excellent with cut of red meat, vegetables, soups and boiled legumes.
